If you are anything like me – cooking meals for years on end, you have no idea of what to cook next. Here is a dish that I enjoy, you may as well.
It is summer time, and the tomatoes are ripe. There are many ways to eat them, but my most favourite way is in a peameal bacon & tomato sandwich. However, cutting that raw peameal bacon is always a pain. Here is a better way! This also means that you have bacon for the rest of the week for more sandwiches, or even a eggs benny brekkie… if it doesn’t all disappear from the fridge overnight!
Try the cake, it is a beautiful way to use up some of those small red raspberries you can pick as you are out after blueberries. And seriously, you could make this cake with a blueberry sauce as well. I just prefer raspberries over blueberries. I still remember Shawnigan’s raspberry chicken with fondness.
