In these days when both parents work, and schedules are tight, it is very difficult to organize home cooked meals. This recipe helps to put together an old favourite with an estimated prep time of 20 minutes and cooking time of 1/2 hour. Enjoy!
1 pound ground beef
1 medium onion (diced)
1/2 medium green pepper (diced)
1 can peas
1 can corn
1 box of instant potatoes (8 serving size)
Brown beef, onion and green pepper. Layer on bottom of a casserole dish. Layer the peas and corn on top. Make instant potatoes according to manufactures instructions using slightly less water. Top beef and vegetables with potatoes. Bake at 350F until the potatoes begin to brown. Grated cheddar can be sprinkled on top of the potatoes for extra flavour if desired.
